THE pinnacle event of the Victorian hospitality industry unfolded on Monday night, May 20 at Crown Palladium, with a diverse array of venues and influential figures in the sector being honoured in 40 distinct categories during the sold-out gala dinner and awards ceremony.

And rising to the top, as the Overall Best Hotel of the Year (Regional) was The Middle Hotel Korumburra, which also took out the highly coveted ‘Parma of the Year’ award against all comers.

The iconic Parma of The Year was tightly contested by 16 finalists with The Middle Hotel in Korumburra finding the way into hearts of our judges as the champion, scoring a perfect score of 100% on the books,” said a spokesman for the Australian Hotels Association (Vic).

Middle Hotel licensee Ben Fisher, who attendeed the glittering awards night at Crown on Monday night was delighteed.

"I think a lot of pubs have got good parmas, I guess, but it's very nice to be crowned the best parma in the state," said Ben on Channel 9 News on Tuesday night.

They gave equal billing to the Middle's champion chef Mark Smith.

"Parma and a pot. It's really what Australia is all about. It's iconic so to win it makes us very proud," said the winning chef.

Asked for his secret to success, he said it was all about the quality ingerients although the preparation must be top class too with the dish earning an almost impossible 100% score from the judges.

"It's got to be the chicken, the quality of the chicken, the quality of the crumb, the Naopli sauce has got to be a nice flavoursome Napoli, good quality ham, the cheese that we use is a cheese blend," said Mark on National Nine News, as the perfect parma appears before the eyes of the viewers.

They predicted a rush to Korumburra's Middle Hotel for a taste of the best parma in the state so it's highly likely you'll need a booking for lunch or dinner for the foreseeable future.
